Justin and Jess Minchak

About Us

Born and raised in the Downingtown and West Chester area, Jess and Justin have spent the majority of their lives rooted in Chester County. Justin discovered his love for the food world early on, starting as a dishwasher at just 15. From the moment he stepped into a bustling kitchen, he knew that creating memorable dishes was where he belonged.

Jess shared that same spark. Even as a kid, she was drawn to the creativity and connection that food brings. After graduating from Ithaca College, she followed that passion straight into culinary school—an experience that set the foundation for everything that came next.

For more than five years, the husband‑and‑wife team dreamed of opening a breakfast and lunch spot of their own. They envisioned a cozy neighborhood café that felt local, welcoming, and true to the kind of food they love to make at home. With a commitment to seasonal ingredients, scratch‑made dishes, and even crafting their own jams, they slowly began shaping a menu that reflected their shared philosophy.

That vision—and their deep passion for comforting, thoughtfully made food—eventually became Two Birds Cafe, where their breakfast and pastry creations finally found a home.

Imagine walking into a little neighborhood cafe, where friendly smiles greet you before you’ve even made it to the counter. The warm smell of fresh‑baked pastries drifts through the air—cinnamon buns, scones, and Crumb Lovers lined up behind the glass, looking almost too good to choose from.

Glance at the menu and you’ll see breakfast and lunch dishes made with fresh, local ingredients. By the register, jars of native honey and fresh ground bags of Lamont Coffee—the kind of simple, thoughtful treat that makes a perfect grab‑and‑go gift for a friend, a family member, or anyone who could use a little sweetness in their day.

GIVING BACK TO
THE COMMUNITY

Giving back—whether through donations or through meaningful actions—is one of the simplest ways we can help create a better world for the people around us. Jess and Justin have quietly supported nonprofits for years, offering private dinners for galas, serving on committees, and lending a hand wherever they could.

Now, through Two Birds Cafe, they’re able to extend that support even further. The organizations highlighted here represent just a portion of the groups they’ve supported over the years, and they’ll continue to stand behind them—along with new organizations introduced to us by our customers.
